Back by popular demand, the Spring Dinner Series invites the public to enjoy a gourmet, four-course meal at the college near International Drive. Each menu and meal — along with the dining area — will be created and managed completely by students with the help of a special guest chef.

“We’re excited to offer these dinners again because they’re a valuable learning experience for our students and the community really enjoys them, too,” said Jonathan Judy, a chef and instructor at Rosen College who will help guide the students during the process.

The Spring Dinner Series will take place on Feb. 11, March 3, March 24 and April 14 from 5 p.m. to 7:30 p.m. Seats must be purchased in advance; no walk-ins will be accepted. The total cost is $30 per person plus tax. Registration for each dinner closes one week in advance.

Ph.D. Candidate and Graduate Teaching Associate Marissa Orlowski and senior JR Cook joined anchors John Brown and Amy Kaufeldt to demonstrate how to make several crowd-pleasing fall cocktails at home. See below for the recipes featured during the broadcast.

Apple-Pear Spritzer (Non-Alcoholic)

Ingredients:

  • 36 oz. Apple Cider
  • 36 oz. LaCroix Peach-Pear sparkling water
  • 12 oz. LaCroix Pure sparkling water
  • Fruit: diced apples, sliced pears, orange slices
  • Spices: cinnamon sticks, star anise
  • Directions:

    1. Soak the fruit and spices in apple cider in a large punch bowl (1-2 hours before serving).
    2. Add sparking waters into a large punch bowl just before serving.

     

    Fall Old Fashioned

    Ingredients:

  • 2-3 dashes Angostura Bitters
  • 1/4 oz. Maple Simple Syrup (1:1 water and maple syrup)
  • 1/4 oz. Amaretto Disaronno
  • 2 oz. Bulleit Bourbon 10 Year Old
  • Food grade grilling oak plank
  • Orange peel
  • Directions:

    1. Using brulee torch, toast oak plank and place glass over charred wood.
    2. Add all other ingredients besides the orange peel to a mixing vessel and stir.
    3. Add ice to “smoke-rinsed” glass.
    4. Pour cocktail over ice.
    5. Garnish with a twist of orange peel.

     

    Pineapple Mezcal “Cocktail”

    Ingredients:

  • 2/3 cup water
  • 2/3 cup pineapple juice
  • 1/4 cup lime juice (preferably fresh-squeezed)
  • 4-5 tbsp. Knox unflavored gelatin (about 4 packets)
  • 4 tbsp. turbinado sugar
  • Pinch chili powder
  • 1/2 cup mezcal or tequila
  • 2 oz. triple sec
  • Black sea salt
  • Directions:

    1. Pour water and juices into small saucepan. Sprinkle gelatin, sugar and chili powder over the top and let it soak for a few minutes.
    2. Heat over medium, stirring until the gelatin and sugar dissolve. The mixture can simmer, but should not boil.
    3. Remove from heat and allow to cool for about 1 minute.
    4. Add the spirits and stir.
    5. Pour into a 9×13 or 8×8 pan. A 9×13 pan will give you more squares that are low in height; an 8×8 pan will give you less squares that are taller.
    6. Chill overnight. Cut into squares and remove with an offset metal spatula.
    7. Sprinkle or brush with sea salt.

    Rosen College Students Test Drive Skills at Bacchus Bash 2014 /news/students-test-skills-bacchus-bash-2014/ Thu, 03 Apr 2014 16:52:57 +0000 /news/?p=58346 A group of about 25 鶹ԭ Rosen College of Hospitality Management student volunteers are taking their skills on the road to staff and run their own food and beverage booth at Bacchus Bash 2014 on Friday. This annual charitable event, organized by the Central Florida Hotel & Lodging Association, is an outdoor street party featuring over 70 food, beverage and entertainment booths that expects around 25,000 attendees.

    While students have volunteered for the event in the past, this is the first year they get to be part of the action, from food prep to set up to serving and customer service.

    So what’s on the menu for Bacchus Bash? The Rosen College booth will offer a red and white wine gelee, chocolate truffles and stilton cheese marinated in a ruby port. Professors also taught students how to carve ice for the event, transforming a large ice block into a gleaming pineapple to adorn the booth.

    “This is an amazing opportunity for students to learn and experience what it’s like to run a food and beverage operation in a high pressure setting like a live event,” said Dr. Cynthia Mejia, an assistant professor in the Foodservice and Lodging Management department at Rosen College. “This is where the skills we teach them in class come to life.”

    Bacchus Bash will take place Friday, April 4 from 5 p.m. – 10 p.m. at the Orlando Premium Outlets on Vineland Ave. The students’ booth will be located near the Coach store. Admission and parking are free. Proceeds from food and beverage sales benefit scholarships for local schools, including Rosen College.

In addition to a rousing 30-3 football victory over the Boston College Eagles, families enjoyed exclusive Rosen College happenings including a Game Day Open House, Family Weekend Brunch and Red, White & B-luau.

    On Saturday afternoon, over 40 parents, students and alumni attended the Rosen College Game Day Open House event on main campus. Guests experienced mock classroom discussions on the topics of theme parks and restaurants, competed in theme park trivia and learned about two of Rosen College’s professional student organizations – Meeting Professionals International (MPI) and the National Society of Minorities in Hospitality (NSMH). The event was organized by Rosen College Coordinator of Academic Services, Joshua Johnson.

    On Sunday, families were invited back to the Rosen Campus for the annual Family Weekend Brunch. The sold-out event catered to 300 guests in three seatings, who enjoyed a free photo booth and delicious fare. Special appearances and welcoming remarks were made during the event by Dean Abraham Pizam, Associate Dean Tadayuki Hara and Chair of the Department of Foodservice & Lodging Management, Joe Hutchinson.

    To commemorate the tenth anniversary of September 11th, Rosen College Student life sponsored the Red, White & B-luau. The live show featured Polynesian-style entertainment in the Darden Auditorium that left guests with a sense of patriotism coupled with a tropical flair.

    Rosen College was pleased that so many families chose to spend their weekend with 鶹ԭ.
